Once you've selected your side, you cannot switch to the other. You should choose based on what recipes are available. There are some very cool and unique recipes for each side. Engineering is good for PvP and for a few items useful in raids. Gnomes have a racial ability of +15 to engineering. This allows them to reach artisan engineering prior to level 35. Some defenders can be summoned by the gnome that are higher level thanks to this bonus to engineering.
